Peanut Butter Biscuits - per your request

2 cups flour
4 TB sugar
3 TB baking powder
3/4 tsp salt - NOT KOSHER
1/2 C smooth Peanut Butter
2 TB solid vegetable shortening
3/4 C milk

Preheat oven to 425.

Lightly grease a baking sheet w/o sides. Combine flour, sugar, baking powder and salt in a large mixing bowl. Whisk to blend thoroughly. Add the PB and shortening and cut in with a knife until the mixture is crumbly.

Make a well in the dry ingredients. Pour in milk and toss with a fork until the dough holds together. Gather the dough into a ball and roll it around the inside of the bowl to pick up any stray particles. Transfer to a lightly floured surface and knead 20 - 25 times, sifting on flour if necessary to prevent sticking. Pat into a circle, then roll to a 3/4 inch thickness. Cut out with a 2 inch biscuit cutter and place on the prepared baking sheet. Bake for 12 - 15 minutes or until nicely browned. Serve immediately or cool on a rack. Makes 15.
