Apple Dumplings


Get out your Living Hope cookbooks and turn to page 105 to try out this yummy goodness. I think there may be a typo (who was responsible for editing these anyway?) as to the number of dumplings it makes. Anyway, Andi and I made 4 this evening with one roll of biscuits. She rolled 2 biscuits together to make 4 large circles. In a bowl we combined about 2 T sugar, 1/2 cup of sugar, about 1/4 cup of raisins, some cinnamon and 2 very thinly sliced Granny Smith apples. We used a veggie peeler on the apples to get real thin slices.
Cook that mixture in the microwave for 3 minutes. Sprinkle a little cinnamon and sugar mixture around the biscuit. Divide the apple mixture evenly upon your biscuit circles and then fold up the biscuit around it, dip it in melted butter and then more cinnamon sugar mixture. Put it in a Jumbo muffin tin - seal side down. Make an X in the top, then bake at 350 for 30 minutes. I bet you're wishing you could see that filling up close - so here you go!
They were GREAT! Easy and fun to make - these may just make an appearance at the Fall Treats Cooking class in October.
