Keegan & the Pumpkin Roll Cupcakes

Keegan loves to help in the kitchen -- and he's good at it. Today we made Pumpkin Roll Cupcakes. He mixed the entire batter himself and once they were in the oven, he guarded the door so that nobody but him could see when they "got tall and were all done."
He patiently sat there for 20 minutes, watching the timer and the oven door window.

Of course, he had to eat a bit of ice cream while he waited. It is an ice cream shop after all.

and when they were all done - although not a one of us like pumpkin, we managed to taste test our way through 6 cupcakes. They are delicious - cream cheese filled and iced. YUMYMY!
