Oatmeal Cake


1 1/4 C boiling water
1 C oatmeal
Mix and let stand for 20 minutes

Cream together 1 stick of butter, 1 C brown sugar (packed), and
1 C white sugar. Add 2 eggs and 1 1/2 tsp Vanilla then mix. Add the oatmeal mixture and blend thoroughly. Add 1 1/3 C flour, 1 tsp salt, 1 tsp baking soda and 1 heaping tsp of cinnamon. Bake in a 9 X 13 pan for 35 minutes or until done at 350 degrees.


Topping for Oatmeal Cake
1 C brown sugar
1 C coconut
1 C chopped nuts
4 tsp butter
1/3 C milk
Boil for 3 minutes or until brown. Spread on warm cake.
This recipe came from Christine. Andi and I made it today and the only thing we did different was add some raisins. We added about 1/2 cup each to both the cake batter and the topping. It would be delicious without any topping at all. Thanks, Christine!
