I don't know what to call this
but yesterday Patricia asked me if I had a good quiche recipe. I don't. Never made one in my life. Then this morning I was "talking" about submitting a recipe for the Pillsbury bake off and someone suggested quiche. Twice in two days this word has come up.
This morning Patricia told me how she made hers and I thought it sounded like something I might be able to slide by my family. I went to the grocery store to buy the needed ingredients I don't normally keep on hand and knowing that this thing was going to have several cheeses in it, I did what any forward thinking mom would do. I got a corn dog from the deli and ate it on the way home. I'm such a planner that way.
The way I'm obviously NOT a planner was that I forgot the all important ingredient for the crust - a frozen pie crust. I had one at home, but the directions said to thaw for an hour and I didn't have an hour until Billski left for work to sit around and watch dough thaw. Thus, I varied the recipe right off the bat and decided to bake it in a cheesecake pan instead of little ramekins.
So I started by cubing some cheapo cubed ham and browning it in some butter with a chopped onion, green pepper and mushrooms. While that was starting to caramelize, I boiled some broccoli florets for two minutes in salted water.
I added that to the mixture and let it cook for a minute or so more.
So to the skillet, I added 10 eggs and 2 cups of half and half that had been whisked together, along with some colby and monterrey jack cheese.
It was then baked at 350 for about 30 minutes and right before serving, a sprinkle of shredded cheddar was added. It turned out light and fluffy and I just cut it with a spatula and served it up.
I don't know what to call it, but it was fun to make and will be in our recipe box for future use.
