Taco Soup
We made this at cooking class Saturday and it was great. It was hearty and easy to make and just about everyone liked it. To the best of my recollection, here's the recipe:
2 pounds browned and drained ground beef
1/2 cup dehydrated onion
1 tsp garlic powder
2 cans corn
1 can diced tomato
1 can Rotel diced tomatoes with chilies
1 large can tomato sauce
1 package dry Ranch dressing mix
1 package taco seasoning
1 can Brooks chili beans in sauce
1 can Pinto beans
Mix it all together and let it simmer. You can serve it with shredded cheese on top or put corn chips in the bottom of the bowl before adding the soup.
The recipe called for "Ranch Beans". I had never heard of Ranch Beans and when I went to Wal - Mart, they didn't have them, so I substituted the other kind of beans. However, when I went to the Dollar General Store last night, I found Ranch Beans. So I bought some to try next time -- because there will be a next time. It's my turn to cook dinner at church on Wednesday night in a couple of weeks, and I'm thinking this will be what I'm serving.
