Ham & Cheese Muffins
I figured Bill would really like these muffins and the kids would eat them grudgingly. Of course, I was wrong. Bill thought they were OK, and the kids ate them hot and then later in the day, for a snack.
They were really simple to make. Mix one cup diced ham and 2/3 cup of cheddar cheese into a box of prepared Jiffy cornbread mix. Bake at 350 until done. For Bill, I added some chopped green pepper and onion in his. Even that didn't stop the kids from eating them, so I'm guessing they really did like them.
