Very simple cheesecake

This cheesecake is a bit sweeter than an ordinary cheesecake and it's very easy to make. Eggs and cream cheese should be at room temperature before you begin.







Crumble 1 package of graham crackers and mix with a stick of butter and 1/2 cup sugar. Make into crust in buttered 9 inch springform pan. Set aside.

FILLING
3 pkgs. (8 oz. each) cream cheese, softened
1 can (14 oz.) Sweetened condensed milk
1/2 cup granulated sugar
3 tablespoons lime juice
1 tablespoon vanilla extract
3 large eggs

Cream the cream cheese and milk till smooth. Add sugar, lime juice and vanilla and mix well. Put in eggs and mix just until blended. Do not over mix.

Bake 65 - 70 minutes at 300. Don't forget the water bath for extra smoothness. Since I've started doing this, not a single cheesecake has cracked, so it's worth the extra effort.
