A Water Bath

I've read about baking your cheesecake in a water bath, but had never tried it. Now, having tried it, I'll never do it any other way. This was Big Guy's birthday dessert and it is the only one I've made that didn't split down the middle. Cheesecake - not regular cake. I HAVE made a few regular cakes that didn't fall apart.

Anyway, this one was great. So if you are thinking of baking a cheesecake, take the time to do it in the water bath. You'll be glad you did.
